Shortcrust pastry, the recipe to make it without butter. With yogurt and a pinch of cinnamon

A greedy dough and a lighter version than the traditional recipe. And once ready, use the shortcrust pastry without butter, with yogurt, to prepare many delicious cookies.

Preparation time:  15 minutes

Cooking time:  40 minutes for biscuits and 40-50 minutes for tarts

Difficulty:  low

Perfect for the preparation of pies and biscuits, the shortcrust pastry is one of the most used bases in pastry. A gluttonous dough that generally requires the use of butter as an ingredient. The recipe that we propose today instead, instead of butter provides yogurt. The result is a shortcrust pastry that is not only soft and easy to work but also lighter and healthier.

Let's not waste any more time and let's see together, step by step, the recipe for shortcrust pastry without butter with yogurt :

  •     300 grams of flour
  •     125 gr sugar
  •     1 jar of yogurt (125 g, any flavor)
  •     1 egg
  •     1 pinch of cinnamon
  •     1 teaspoon of baking soda
  •     1 pinch of salt
  •     Grated lemon peel

  1. Grate the lemon peel and sift it together with the flour, cinnamon, pinch of salt, sugar, and baking soda.
  2. Pour everything into a bowl and arrange the ingredients in a fountain. Pour in the yogurt and the egg, mix all the ingredients well, and form a ball.
  3. Wrap the shortcrust pastry ball with a cloth and keep it in the fridge for 30 minutes. Use the shortcrust pastry to prepare the recipe of your choice.

And nowhere is a delicious variant that our reader Francesca, blogger of "Mistofrigo" who, with our recipe has prepared many tasty biscuits pointed out to us:

  • 300 gr of wholemeal spelled flour
  • 100 grams of sugar
  • 100 g of semi-skimmed natural yogurt
  • 1 egg
  • 2 teaspoons of yeast
  • 1 tablespoon of unsweetened cocoa for desserts for 1/3 of the dough

  1. Preheat the oven to 180 ° C , work the eggs with the sugar and yogurt, add the spelled flour and baking powder.
  2. Take about 1/3 of the dough and knead it with the bitter cocoa.
  3. Divide the shortcrust pastry without butter into molds, preferably silicone or non-stick, without completing the shape. The thickness of the dough must be at least 1 cm because as it rises it will double in volume and have the “real sweet effect”.
  4. Fill the molds with the cocoa mixture and then cook in a hot oven for about 40 minutes.
